Haki is willpower made force. It sleeps in every living being, but only a fraction ever awaken it — and fewer still master it. In the era of the story, Haki is the great equalizer: the weapon that lets fighters without Devil Fruits stand at the very top of the world, and the counter that keeps fruit powers from being unbeatable.
Observation Haki (Kenbunshoku)

The power of perception. Observation Haki lets a fighter sense the presence, strength, and emotions of others — even through walls, or with their eyes closed. Trained to its peak, it becomes precognition in miniature: masters like Charlotte Katakuri see several seconds into the future, dodging attacks before they begin. It is the technique that turns a strong fighter into an untouchable one.
Armament Haki (Busoshoku)

The power of hardening. Armament cloaks the body or a weapon in an invisible armor of will — it blocks blades and bullets, shatters stone, and above all it allows a fighter to touch the “real body” of Logia users, whose elemental bodies ignore ordinary attacks. Its advanced form goes further still: emitting Haki into a target to destroy them from within, without touching them at all. Legendary blades permanently blackened by generations of Armament — the “black blades” — hint at how deep this power runs.
Conqueror’s Haki (Haoshoku)

The power of kings. One in a million is born with it, and it cannot be trained, bought, or inherited. It knocks the weak-willed unconscious in a radius without a blow. The advanced form coats attacks in Conqueror’s Haki — the technique Luffy had to learn before the final saga.
Why it matters
Devil Fruits grant powers; Haki often decides who wins. A fruit-less swordsman with strong Haki can beat a careless fruit user — which is why the Marines, the Emperors, and the Revolutionary Army all scout for it.
